Guidance §483.480(b)(1)(i)

A “substantial evening meal” is defined as an offering of three or more items at one time, one of

which includes a high quality protein such as meat, fish, eggs, or cheese. The meal should

represent no less than 20 percent of the day’s total nutritional requirements.
